Sushi Kapposachi

Set in the Nozoe district of Nagaokakyo, Sushi Kapposachi is a sushi kappo restaurant where fresh seafood meets polished artisan technique. A red miso soup made with fish bone broth, rolled wheat gluten, and shirataki noodles provides a distinctive contrast of textures that pairs naturally with the sushi.

Kappo-style à la carte selections are equally prominent. Towering with impressive volume, the signature kakiage fritter combines the sweetness of onion, aromatic mitsuba, and tender carrot, balanced by a dollop of grated daikon radish. Diners will also find dishes that reflect meticulous heat management and preparation, such as salt-grilled guji tilefish with crisp skin and juicy, flaky meat, as well as dashimaki tamago, in which delicate layers of egg are repeatedly rolled around a generous reservoir of broth.
